Sweet Potato Waffles

It was Sunday morning and Remi and I wanted something other than eggs or oatmeal, but nothing too unhealthy.
 
So I went to Google and found a sweet potato waffle recipe. I changed some things out for healthier substitutes. 

 Ingredients

  • 1 1/2 cup almond flour
  • 1 cup quick oats
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup whole milk or almond milk
  • 1/2 cup plain whole fat yogurt
  • 3 tablespoons coconut oil or butter
  • 4 ounces sweet potato puree
  • 2 tablespoons maple syrup

Directions

  1. Mix the dry stuff
  2. Mix the wet stuff
  3. Mix the dry and wet stuff together
  4. Put in waffle maker
